Our Head Chef

Let us introduce the face behind the food: our Head Chef, Amedeo Carnevale. Amedeo has gained 18 years of restaurant experience. He was introduced to cooking from an early age, alongside his grandmother who taught him to make traditional homemade pasta and bread the old-fashioned way with no machines. Amadeo’s love for cooking led him to college in Italy were he was classically trained. He then travelled around the world gaining experience. He brings a combination of traditional cooking with a modern twist to Alvito’s, with dishes such as Chicken Cajun Cannelloni, Hand-made Seafood Ravioli, and Open Chicken Lasagna.

With Amedeo’s authentic Italian background, his cooking style is unique and unconventional, allowing our customers to experience new flavors, but keeping the origin of Italian food. Some of his recipes are inspired by his grandmother Carmela, which always brings passion to his food and attention to detail.
